I know, when you hear the word "chia" you have flashbacks to chia pets and the catchy phrase "ch-ch-ch-chia!" - but here's the thing...Chia seeds are good for you!
Chia seeds are rich in Omega-3 fatty acids, even more so than flax seed
Chia seeds do not need to be ground to be absorbed by the body
They help with hydration due to their ability to absorb up to 9-10 times their weight in water
Chia seeds also contain fibre, protein, calcium, magnesium, copper, iron, and zinc among many other nutrients

How to make Chia Fresca:
2 cups water or coconut water
1 1/2 Tablespoons chia seeds
Lemon or lime to taste
Let chia seeds soak in the water for at least 10 minutes and then shake to break up any clumps. Add lemon or lime and enjoy!
I suggest drinking this with a straw - not only does it allow you to easily stir the mixture to keep the seeds incorporated it helps to reduce the amount of seeds that try to get stuck in your teeth ;)

F o o d i e : S t r a w b e r r y C h e e s e c a k e C u p s
I made these sweet treats for a little gathering at a friends a few weeks ago. Here is the original recipe. I swapped out the graham crust and used crushed Oreos instead. I also didn't have too many strawberries on hand so I used a jar of freezer jam in place of the blended strawberries. These turned out great! Definitely a treat I would make again.

It's probably not good that I figured out how to make my own magic shell. Good thing I rarely have ice-cream in the house.
As is often the case, homemade is better! Especially since you can pick the exact kind of chocolate you want and there aren't all those mystery ingredients involved.
You'll need ~1/4 cup chocolate to 1 tablespoon coconut oil (this can easily be halved or doubled, depending on how many servings you want). Put the chocolate and coconut oil in a microwave safe jar or glass and heat on half power in 30 second intervals stirring in-between until smooth.
Then just drizzle over your ice-cream and watch the magic happen!

These votives are a fun and simple way of adding a little glitz to your decor. Simply tape off where you don't want glitter and paint the exposed glass with a thick layer of Mod Podge. Pour on the glitter and allow to dry (I removed the tape before the glue had set). Brush off the loose glitter once the glue has dried. At this point you can add a candle and sit back and enjoy! You can also go back and add a thin layer of Mod Podge over the glitter to seal it in place.
There are numerous possibilities for customization with this, so get creative, embrace your inner glitter obsessed 6 year-old self and have fun!
