This is such a delicious and warming dish for a cold winter day or a day with a cold.

Ingredients:
- 4 cups chicken broth
- 1 large chicken breast, cubed
- 3/4 cup chopped carrots
- 3/4 cup thinly sliced leek (I've never been a fan of celery in soup and leek makes a great substitution!

- big handful (or two) noodles of your choice (I suggest small soup noodles or no yolks)
- salt and white pepper to taste
(makes two hearty servings)
To make:
Toss cubed chicken into broth and boil until chicken is cooked through. Add carrrots and leek and allow to cook until carrots are to your desired consistency. Then add pasta and boil until noodels are done. Season to taste. Lastly, scoop into a bowl, snuggle up on the couch with some blankets and enjoy!
